Ingredients
  

  • 2 lb Boneless skinless chicken breasts
  • ½ Onion chopped
  • ½ C Celery chopped
  • 2 tbsp Butter cut into pieces
  • 1 tsp Seasoned salt
  • 1 tsp Poultry seasoning
  • 2 tsp Minced garlic
  • 2 C Chicken broth
  • Salt and pepper totaste

For the dumplings:

  • 1 ½ C Mozzarella cheese shredded
  • 2 oz Cream cheese
  • 1 C Almond flour
  • ½ tsp Baking powder
  • 1 large Egg
  • ¼ tsp Garlic powder
  • ¼ tsp Italian seasoning
  • ¼ tsp Xanthan gum
  • Pinch of salt

Instructions
 

  • Add all the chicken to a crockpot.
  • Sprinkle with salt and pepper to taste, as well as the seasoned salt and poultry seasoning.
  • Add in the onion, celery, minced garlic and butter that is cut into pieces.
  • Pour the chicken broth over the mixture.
  • Cook on high for 3 hours.
  • Place the cream cheese and mozzarella cheese in a bowl that is microwave safe.
  • Heat the cheeses for 30 seconds at a time until completely melted and well combined.
  • Add the cheese mixture to a mixing bowl with the remaining ingredients for the dumplings. Blend until a smooth dough has formed.
  • Wet your hands slightly, and form the dough into small dumplings. Place the dumplings into thecrockpot, and cook on high for an additional hour.
  • Serve immediately.
