Pulled Pork Soup

A simple recipe to prepare with leftovers from a pork roast, this pork soup is boasting with flavor, and a little bit of a spicy kick!

Servings 4 if serving as a meal, 8 if not

Ingredients
  

  • 1 tbsp olive oil
  • 1 small onion chopped
  • 1 cup chopped carrots
  • 1 tbsp ground cumin
  • ½ tsp cajun seasoning (to taste)
  • 32 oz chicken broth
  • 7 oz can green chiles
  • 1 14.5 ounce can white beans, drained
  • 1 14.5 ounce can diced tomatoes
  • 2 cups shredded pork

Pork roast recipe

  • 3 lb pork roast
  • 1 tsp salt
  • 1 ½ tsp pepper

Instructions
 

  • Chop the onion.
  • Peel the carrots, and chop into ¼-inch slices.
  • Add olive oil to adiutch oven or large pot and heat over medium heat.
  • Add onions and carrots. Cook for 10 minutes, or until the carrots are tender; stirring occasionally.
  • Add the cumin and cajun seasonings, and stir constantly for 1 minute.
  • Add chicken broth, then scrape the bottom of the pan while stirring it in.
  • Add the green chiles, white beans, diced tomatoes, and shredded pork.
  • Simmer for 30 minutes. Serve hot!

Pork roast recipe

  • Sprinkle pork roast with salt and pepper, and add to the crockpot.
  • Cook on low for 8 hours, or high for 4 hours.
  • Remove from the crockpot and shred the meat.
