DIY Ice Cream Sandwich

Ingredients
  

  • ½ gallon Vanilla Ice Cream
  • 16 Store-bought MnM’s cookies
  • Mini chocolate chips
  • Coconut flakes
  • Sliced almonds
  • Walnut pieces
  • Sprinkles

Instructions
 

  • Put your toppings into individual bowls.

  • Turn a cookie upside-down and put a scoop of ice cream onto it.

  • Place another cookie on top, right-side-up, pressing gently.

  • Use a knife or icing spatula to even out any ice cream that has come out of the sandwich.
  • Roll into the topping of your choice.

  • If it doesn’t seem to stick, use your hand to press the topping onto the ice cream.
  • Place the finished icecream sandwich on a cookie sheet covered with a piece of parchment paper.
  • Put in the freezer for 10-20 minutes to harden.
  • Store by wrapping each ice cream sandwich in a piece of parchment paper and place in a gallon freezer storage bag.

  • Store ice cream sandwiches for a few weeks.
  • When you are ready to have one, place it on a plate at room temperature for a few minutes before eating, as the cookies will be hard.

Notes

  • Put cookies in the freezer before you assemble your sandwiches. This will help keep the ice cream from melting too quickly.
  • At any time while making the sandwiches the ice cream seems to have melted; place the ice cream and the semi-completed or fully completed cookie sandwiches back in the freezer to harden.
  • Use different sizes and types of cookies and make it your own!
  • Different topping ideas: butterscotch chips, Fruity or Cocoa Pebbles cereal, Cinnamon Toast Crunch, crushed Oreo cookies, graham cracker pieces with mini marshmallows, Reeses Pieces, Raisins, Dried cranberries, Macadamia nuts, Sour Patch Kids, Swedish Fish.
