Pulled Pork Soup
A simple recipe to prepare with leftovers from a pork roast, this pork soup is boasting with flavor, and a little bit of a spicy kick!

Servings 4 if serving as a meal, 8 if not
- 1 tbsp olive oil
- 1 small onion chopped
- 1 cup chopped carrots
- 1 tbsp ground cumin
- ½ tsp cajun seasoning (to taste)
- 32 oz chicken broth
- 7 oz can green chiles
- 1 14.5 ounce can white beans, drained
- 1 14.5 ounce can diced tomatoes
- 2 cups shredded pork
Pork roast recipe
- 3 lb pork roast
- 1 tsp salt
- 1 ½ tsp pepper
Chop the onion.
Peel the carrots, and chop into ¼-inch slices.
Add olive oil to adiutch oven or large pot and heat over medium heat.
Add onions and carrots. Cook for 10 minutes, or until the carrots are tender; stirring occasionally.
Add the cumin and cajun seasonings, and stir constantly for 1 minute.
Add chicken broth, then scrape the bottom of the pan while stirring it in.
Add the green chiles, white beans, diced tomatoes, and shredded pork.
Simmer for 30 minutes. Serve hot!
Pork roast recipe
Sprinkle pork roast with salt and pepper, and add to the crockpot.
Cook on low for 8 hours, or high for 4 hours.
Remove from the crockpot and shred the meat.
