Keto Crockpot Chicken and Dumplings
Ingredients
- 2 lb Boneless skinless chicken breasts
- ½ Onion chopped
- ½ C Celery chopped
- 2 tbsp Butter cut into pieces
- 1 tsp Seasoned salt
- 1 tsp Poultry seasoning
- 2 tsp Minced garlic
- 2 C Chicken broth
- Salt and pepper totaste
For the dumplings:
- 1 ½ C Mozzarella cheese shredded
- 2 oz Cream cheese
- 1 C Almond flour
- ½ tsp Baking powder
- 1 large Egg
- ¼ tsp Garlic powder
- ¼ tsp Italian seasoning
- ¼ tsp Xanthan gum
- Pinch of salt
Instructions
- Add all the chicken to a crockpot.
- Sprinkle with salt and pepper to taste, as well as the seasoned salt and poultry seasoning.
- Add in the onion, celery, minced garlic and butter that is cut into pieces.
- Pour the chicken broth over the mixture.
- Cook on high for 3 hours.
- Place the cream cheese and mozzarella cheese in a bowl that is microwave safe.
- Heat the cheeses for 30 seconds at a time until completely melted and well combined.
- Add the cheese mixture to a mixing bowl with the remaining ingredients for the dumplings. Blend until a smooth dough has formed.
- Wet your hands slightly, and form the dough into small dumplings. Place the dumplings into thecrockpot, and cook on high for an additional hour.
- Serve immediately.
